Bison Patties!

Happy Thursday everyone🙌🏼 Excited to share one of my favorite recipes. Super simple and easy to make. The trick to these is to not over cook them and to pair them with a great sauce. This time I decided to pair them with my avocado cilantro mayo. I absolutely love this mayo plus you can always switch it up to make it mild, spicy or extra 🔥! (recipe below)
. Patty Ingredients:
-1 to 2 Tbsp ghee or avocado oil
-3/4 cups chopped eggplant
-3/4 cups chopped Portobellos
-1/2 cup chopped leeks
-1 Lb ground bison
-1 Bunch cilantro
.
How to make:
1. Mix all ingredients and form into patties.
2. Add 1 to 2 Tbsp avocado oil or ghee (I used my rosemary infused ghee) to a hot cast iron skillet. Place patties on skillet about 3 min on each side or until seared and crisp.
3. Serve on a bed of greens with an aioli/sauce of your choice.

-3/4 cup @primalkitchenfoods mayo
-1/3 cup cilantro
-1 lime
-lime zest
-Salt+Pepper to taste
-1 Tbps red pepper flakes

Happy Friday! Another great idea for those of us observing lent. I LOVE fresh tuna which is why I chose to use it in this recipe but you can definitely sub Tuna for any other seafood you may have handy like Shrimp, fish chunks for to mention a couple. A delicious chipotle aioli would also go great with these beauties 🤤

Ingredients:
-Fresh Tuna Fillets
-Toasted Sesame Oil
-Coconut aminos
-Sesame seeds
-Butter Lettuce
-Lime
-Coleslaw or Red Cabbage
-Avocado slices

How to make:
1. Dice tuna, add coconut aminos and sesame oil and place in the fridge to chill while you slice cabbage and wash butter lettuce.
2. Assemble wraps and garnish with radishes and lime wedges. Mix coconut aminos with lime juice to use as dipping sauce.

Ingredients:
-Cauliflower florets (1 head)
-Yellow Onion (sliced) (1 medium)
-Garbanzo beans (1 can)
-Fresh Parsley ( half bunch)
-Feta cheese (crumbled)
-Extra Virgin Olive Oil
-All purpose seasoning
-Salt
-Pepper
-Smoked Paprika

Directions:
1.In a bowl mix onion, cauliflower florets, EVOO, salt pepper and all purpose seasoning
2.Once onion and cauli florets are well coated place them in a baking sheet and toast for about 30 min at 350 (until cauli is tender and onion starts to caramelizar)
3.Rinse garbanzo beans, add them to a hot skillet. Add 2 Tbsp EVOO, 1tsp smoked paprika, 1/4 tsp salt and 1/4 tsp pepper. Let them cook for

-1 red onion (chopped)
-1/3 cup hatch chilies (chopped) “chilaca”
-1/2 cup cherry tomatoes
-1 Tbsp tomato paste
-1 Tbsp Red Pepper Flakes
-1/2 tsp cumin
-1 tsp salt
-1 tsp pepper

1.Add chopped onion and 1 Tbsp EVOO to a hot skillet.
2.Once translucent add hatch chilies and cook for 2-3 min.
3.Add ground beef, chili powder, cumin, salt and pepper. Cook until beef is well done.

-1 cucharadita de sal

-1 Tsbp ghee or butter or EVVO or avocado oil
-3/4 cup Diced Grilled Chicken
-3/4 cup Chopped cooked veggied
-2 Tbsp sour cream @greenvalleycreamery -1 cup cooked spaghetti pasta
-1 Tsp salt
-1 Tsp pepper

Directions:
1.Add ghee, butter or oil to a hot pan. Add cooked chicken and cooked veggies.
2.Once chicken and veggies are hot add sour cream.
3.Add cooked pasta. Mix well.
NOTE: If the pasta is too dry add a couple Tbsp of the pasta water (the water where you cooked the pasta)

This is my moms favorite dish! She was over for dinner yesterday and decided to make it for her. Super simple and delicious 🤤☺️
.
Ingredients:
-whole wheat pasta
-1/4 cup fresh lime juice
-half stick butter
-1 cup cherry tomatoes
-1/2 slices portobellos
-1/2 cup chopped onion
-1 bunch spinach
-2 to 3 Tbsp chopped basil
-EVOO -1 tsp salt
-1 tsp pepper

Directions:
1.Cook pasta in a medium pot with boiling water, salt (2-3 Tbsp), 3 Tbsp EVOO and 1/4 cup fresh lime juice. Cook until al dente.
2.Add butter and chopped onions.
3.Once onions are translucent add cherry tomatoes, sliced portobellos, spinach, salt, pepper. Cook for about 8-10 min
4.Add drained pasta.
NOTE: If your pasta is looking dry add 1/2 cup to 1 cup of the water where you cooked the pasta.
5.Add lime juice and chopped basil.
6.Serve and enjoy 🙌🏼 adding shrimp takes it to the next level 🦐 .

Brussels sprouts with pomegranate and balsamic glaze

This dish is one of my favorites for the holidays ❤️❤️ I like to use @traderjoes balsamic glaze but you can always made it from scratch by reducing balsamic vinegar and a bit of honey 😉

Ingredients:
-Brussels sprouts
-pomegranate
-Balsamic Glaze
-EVOO
-salt and pepper
.
How to make:
1.Wash Brussels sprouts and cut them in half. In a large bowl combine Brussels sprouts, EVOO, salt and pepper. Mix until Brussels sprouts are well coated.
2.Roast Brussels sprouts at 400F for about 35-40 min or until tender. (All ovens are different, make sure to watch them)
3.Once Brussels sprouts are well coated, serve and add pomegranate on top along with the balsamic glaze.

Skin on bone in chicken breasts are one of the easiest meats to roast. The bone and skin protects the breast from drying up and the result is DELICIOUS 😍😍

Lentil pasta with creamy tomato meat sauce!

A cold rainy day calls for creamy pasta ☺️ This is definitely one of the easiest pastas I make. All you need is to have all ingredients handy and mix everything together. .
Ingredients:
-1 Lbs ground beef
-2 cups pasta (I used lentil pasta from @traderjoes)
-1 jar @raoshomemade
-2 to 3 Tbsp sour cream @greenvalleycreamery
-1 Tsp Salt and Pepper
.
How to make:
1.Bring water to a boil in a deep pan. Add pasta and cook for about 5-6 min (depending on the pasta you are using) until ‘al dente’
2.Add ground beef to a hot skillet and cook all the way through. Add salt and pepper. Drain extra fat if needed.
3.Add tomato sauce and sour cream to cooked meat. Mix until well combined.
4.Add pasta to meat sauce and simmer until well combined. Add salt and pepper to taste if necessary. .

Delicious noodles made with food I had on hand and wanted to use up before it went bad 😅 I wanted to share this recipe with y'all to show you that you don't always have to have a recipe in order to make something yumm ... look in your fridge and pantry and try to put ingredients together with what you have on hand... it doesnt have to look pretty all you really need is a good combination of flavors I encourage you to give it a try and show me what you create #gtshelfseries

Ingredients:
-1 @yaisthai yellow curry sauce
-Brown Rice noodles
-Pulled chicken
-Sliced poblano peppers
-sliced portobellos
-salt and pepper
-1 Tbsp olive oil
.
Directions:
1.Add olive oil to a hot pan. Add poblano peppers and portobellos.
2.Once portobellos are cooked through bring the flame to a simmer. Add curry sauce and chicken.
3.While sauce is simmering, cook noodles in a pot of hot water. I like to add 1 tsp of salt and 1 tsbp of olive oil to the boiling water.
4.Once noodles are cooked (only takes 3-5 min) add them to the sauce. Give it a good stir to incoportate all ingredients and serve 🤤

Ingredients:
-3-4 cups cooked Quinoa
-1/3 cup Kalamata Olives
-2 cucumbers(diced)
-2 red bell peppers (diced)
-Zest and juice from 1 lemon
-Salt and pepper to taste
-1 Tbsp red pepper flakes (or less for less spiciness)
-Chopped kale (optional)

1.Mix all ingredients and place it in the fridge for 20-30 mins. This will allow all falvors to incorporate 😉

This is one of the most simple recipes I make. I like to spirilize the zucchinis myself using my @kitchenaidusa spiralizer attachment but you can always go ahead and buy them spirilized already. For the sauce I use Rao's homemade brand beacuse of their clean ingredients and amazing taste. Of course making your own will probably be more flavorfull and fresher but for the purpose of effectiveness and simplicity I go ahead and use this one 😌

Ingredients:
- 1  Chopped Onion (any color)
- 1 @raoshomemade home made large jar of your favorite flavorfull
- 1 lb ground turkey
- 4-5 spirilized zuccinis
-1/4 tsp salt
- 1/4 tsp pepper
- 1 Tsp Red Pepper Flakes
-1 Tbsp Olive oil

Directions:
1. Add chopped onion and olive oil to a hot large pan. Let it cook until translucent.
2. Add turkey and red pepper flakes. Cook until turley is cooked all the way through.
3. Add sauce. Let it simmer for about 7 min.
4. Turn heat off and add zoodles. Give it a good stir until everything is well mixed.
5. Serve and enjoy!

Reminiscing on this pesto pasta from last week..there is no way you can go wrong with making pesto.. choose an herb or herbs, add olive oil, your choice of nuts, salt and pepper.. I like to add red pepper flakes as well for some spice 🌶

For these carnitas I used some pork tenderloin I had in my freezer but honestly I rather use pork butt or shoulder for this recipe 🤤

Ingredients:
-2 Lbs Pork meat (tenderloin, shoulder, butt)
-2 Tbsp Avocado or olive oil
-1 Tsp Salt
-1 Tsp Pepper
-1 Tsp Cumin
-1 Tbsp Chipotle Powder
-1 Tbsp Red pepper flakes
-3/4 cup Orange Juice
-1/4 cup Lime Juice
-1/2 cup Beef or chicken stock
.
Directions:
1.Combine all dry seasonings and use the mix to rub the meat.
2.Sear meat with the avocado for olive oil (if you are using an instant pot, press the “Sauté” button)
3.Add all liquids to the meat and set your instant pot on high pressure for 15min.
4.Release pressure, shred meat with 2 forks and enjoy! .

Most people think of burgers as a cheat meal but it really doesn't have to be the typical calorie overload. Calling it ‘Whole Burger’ since it’s made with whole ingredients. Let's talk about what's in this burger 🤤 First thing... the meat, ground beef (20% fat), 1 egg, salt and pepper. Of course I added a little bit of cheese once I grilled the patty but you could always skip that. Added Avocado slices, tomato, lettuce. The bun is an Ezequiel bun from one of my favorite brands @foodforlifebaking . The spread is a mix of @primalkitchenfoods mayo and mustard seeds. Last but not least are some delicious sweet potato fries. I bought them pre cut from the freezer section and all I did was place them in my @breville air convection oven in the airfry function for 20 min.... and VOILAAA!

Cauliflower Tabbouleh

One of the most refreshing recipes thanks to the fresh parsely and mint that go in it. All you need to do for this one is mix everything together and let it sit in the fridge for at least 30 min to let all flavors incorporate. You can definitely go ahead and buy a cauliflower head and grate it yourself but why bother doing all that work if most grocery stores sell it grated already?! 😎
I buy the bag of cauli rice, make a few holes in the bag using a fork and stick it in the microwave for about 30 seconds...all I look for is make it a BIT tender.... not turning it into puree😅

-1 bag cauli rice
-1 cup cherry tomatoes cut in half
-1 cup diced cucumber (I like to use english cucumber)
-1 bunch chop cilantro
-2 tbsp chopped fresh mint
-Zext from one lemon
-Juice from 1 lemon
-1/4 tsp salt
-1/4 tsp pepper

Directions:
1.Microwave or cook cauli rice for about 30 seconds, just enought to make it a bit tender.
2.Combine all ingredients until well mixed.

Meal prepping makes life a thousand times easier. I get back from work/working out and all I have to do is assemble my plate and heat it up. I like to use my @breville Air convection oven to heat up food since I am not a big fan of the microwave but the microwave works well too😉

Steak/Texan Salsa/Grilled Chayote

Ingredients for Steak:
-Steak (I used ribeyer byt Sirloin, NY or any other cut will go great with this dish)
-Salt
-Pepper

How to make:
1.Season each steak with salt and pepper.
2.Place stek on a very hot skillet 3 min on each side. If you like your well done, do 5 min on each side.
.
Ingredients for Texan Salsa:
-1/2 cup black beans (cooked)
-1/2 cup grilled corn (I like to use frozen corn)
-1/2 cup red bell pepper (diced)
-1/4 cup cilantro (chopped)
-Juice from 1 lime
-1/4 tsp salt
-1/4 tsp pepper

How to make:
1.Add all ingredients to a hot pan except for the lime juice.
2.Add lime juice before serving.

Chicken and Veggies Kebabs!

For this recipe you can play with any veggies you like 😎 I used bell peppers, red onion and baby portobellos but make it fun and add whatever you have on hand or whatever you love the most. Don't forget to keep it colorfull 😊

Ingredients:
-1 Lb chicken breasts, cut into cubes
-Medium red onion, cut into squares
-1 Green bell pepper, cut into squares
-1 Red bell pepper, cut into squares
-1 Orange bell pepper, cut into squares
-10 Baby Portobello mushrooms
Marinade:
-1/4 coconut aminos
-2 Tbsp rice wine vinegar
-1/2 Tsp Ginger extract
-1 Tbsp sesame Oil
-1 Tbsp fresh orange juice (optional)

Directions:
1.Mix all ingredients for the marinade. Add chicken cubes and place it in the refrigerator while you prep all the veggies.
2.Using wood or metal swekers build your kebabs alteranting between all veggies and chicken cubes.
3.Place swekers on the grill or a grill pan over medium to high heat. Turn skeweres every 3-5 mins until all sides are grilled and chicken is cooked through.
4.Serve and enjoy! Remember you can make extra marinade and pour over kebabs after serving.

I love mango season🙌🏼 This vinaigrette is sooo fresh and full of flavor. I personally don’t like the taste of raw onions, I always always cook them first 😅 For this vingarette I like to cook both the onion and jalapeno together... of course if you are into raw onions feel free to skip the cooking part.

Ingredients:
-1/3 cup Rice Vinegar
-3 Tbsp Lime Juice (about 2 large limes)
-1/4 cup Cilantro (chopped)
-1/2 Red Onion
-1 Jalapeno (chopped)
-1/3 cup Mango (diced)
-1 Tbsp Avocado Oil

Directions:
1.Add chopped onion and jalapeno to a hot pan. Let it cook until onion is transulcent. Remove from heat and let cool.

Perfect to pair with zoodles or regular noodles. Also, if you simply do not enjoy chopping and cutting veggies you can always buy the pre washed/cut veggies that come in bags. Most grocery stores have them (I often buy mine at @heb).This way all you need to do is slice the chicken and cook everything together ;)

Ingredients:
-1 Lb chicken breast
-2 cups (or 1 small bag) broccoli florets
-3 bell peppers (green, yellow, red)
-1 bag snow peas
-1 Shredded carrots
-1 Shredded red cabbage
.
Sauce:
-1 cup Coconut Aminos
-1/3 cup Rice Wine Vinegar
-1 tsp fresh ginger extract
-1 Tbsp Red Pepper Flakes
-Juice from 1 lime
-Juice from 1/2 orange
.
Directions:
1.Combine all sauce ingredients and set aside.
2.Slice chicken, pat dry it and season with salt and pepper. Cook on a hot pan with 1 tbsp of sesame oil. Remove chicken from the pan once it cooks through.
3.Add 1 tsbp sesame oil to the same pan and add all veggies. Once veggies are 'all dente' add the chicken and sauce to combine all ingredients. Let it simmer for about 2-3 mins and remove from the heat.
4.Serve and enjoy!

Tomatillo Beef Tenderloin

This dish is peferct to make in large batches and keep it in the fridge. You can pair it with riced cauli and black beans (like this pic) or with mixed greens...the options are endless 😉
Ingredients:
-1 Lb beef tenderloin (or beef tenderloins)
-7 tomatillos
-1 Jalapeno
-1 medium white onion
-1 bunch cilantro
-1 tsp salt
-1 tsp pepper
-1 tbsp avocado oil
.
Directions:
1.Cut beef in medium chunks. Season with salt and pepper.
2.For the sauce boil the tomatillos, onion, jalapeno in a medium pot. Once tomatillos change color remove them from the water. Onion and jalapeno usually take a bit longer.
3.Once all vegetables are cooked, add them to a blender along with a bunch of cilantro and 1/3 cup water (the one used to boil the veggies)
4.Add 1 tbsp avocado oil to a hot pan, add the beef and let it cook for about 5 mins. once it is fully cooked add the sauce and let it simmer 15 min.

Recently I posted my Tomato Shrimp Salad recipe which if you haven't yet made it you should soon! If you are into shrimp I am sure you will love it 😍

One of the reasons why I love this dish so much is because I can make a large batch of the Tomato Shrimp Salad and make different dishes with it during the week. A great example is this pasta but you could also do tostadas, over sauteed kale, rices cauli, endless options. Get creative 😎

Ingredients:
-Tomato Shrimp Salad
-Whole wheat pasta

How to make:
1.Boil pasta for about 10 min or until 'al dente' meaning cooked to be firm to the bite.
2.add pasta and tomato shrimp salad to a hot pan until well combined. I like to add about 1 Tbsp lemon juice to add a bit more flavor.

Cheap, flavorfull and easy😎 what else can you ask for?? All you have to do is buy the meat, let it marinade and grill it 🙂 that is literally all you have to do. This recipe is an exmple of what I preach all the time on subing ingredients when you don't have them on hand. Usually this recipe I would do it with green onions instead of leeks but since I had no green onions on hand I went ahead and used a leek I found in the fridge and VOILAAA🙌🏼 It turned out great so now my recipe has changed...feel free to change things up and discover new flavors 😉

Marinade ingredients:
-1 Leek (sliced)
-3 Tsp cayenne pepper
-2 Tbsp red pepper flakes
-1 Tsp ginger extract/juice
-1 cup coconut aminos (or tamari or soy sauce)
-3 Tbsp cup rice vinegar
-1 Tsp salt/pepper
-2 Tbsp sesame oil
-2 Tsp fish sauce
-Orange juice from half an orange
-1 Tsp orange zest
.
Directions:
1.Mix all ingredients for the marinate in a large bowl.
2.Add ribs to the bowl and submerge ribs in the marinade. Let ribs marinade for at least 1 hour at room temperature (you can certainly let them amrinade overnight in the fridge, letting them rest about at least 30 min at room temperature before grilling)
3.Grill ribs (I used a grill pan)
4.Add remaining marinade to a hot pot and bring it to a boil. Remove and server over ribs.
5.Enjoy!

Veggie overload🤤 . Who says you can’t overload your plate with all kinds of veggies...and fruits (avocado of course) ☺️ . After a long day of work, and an orange theory workout I was craving fresh veggies some juicy grilled chicken and a yummy dressing 😎 . Hi all! It is Monday meaning a new week and a new begining. I am going back to basics for todays lunch. A detox lunch from the weekend 😎

Here I have chicken breast seasoned with cilantro and sumac😋 I will be showing ya'll how I made it sometime this week. Paired it with some roasted fingerling potatoes and colored cauli. I am also pairing this meal with my new basil cilantro sauce. This sauce still needs some tweaking so stay tuned for the full recipe later this week 😉🙌🏼

Medium Hot Chicken Drumsticks🌶🍗

Who doesn’t love some great drumsticks with a delicious hot sauce on a Sunday night? I love making these whenever we are craving comfort food but don’t want to overload on sugar. One of the tricks on this recipe is to coat drumsticks with baking powder…trust me this step will help them crisp up better 😉 Let me know what you think! and of course you can always sub drumsticks for any other chicken cut like wings, chicken tenders, etc.

Ingredients:
-1 lb chicken drumsticks
-1 Tbs baking powder
-1 Tsp salt
-1 Tsp pepper
-1 cup Hot sauce (I like @franksredhot original sauce as it has not sugar)
-1/3 cup ghee or butter
-2 Dates
.
Directions:
1.Combine hot sauce, ghee and chopped dates in a hot pot. Using an immersion blender mix all ingredients until well combined and let the sauce sit for about 5 min before removing from the heat.
2.Pat dry drumsticks and add baking soda.
3.Using a brush coat every drumstick with the hot sauce mix.
4.Place drumsticks on a wire rack and bake at 400F for 30-35min (all ovens are different, make sure to keep an eye on them)
5.Once drumsticks are fully cooked remove from the oven and toss them with the remaining hot sauce mix.
6.Garnish with black sesame seeds and enjoy!
