You don’t truly know Vietnamese cuisine until you’ve tried “Mì Quảng”. This VEGANIZED dish truly captures the essence of fresh, aromatic veggies that are used in so many Vietnamese foods. Warm rice noodles with a rich turmeric-annatto seasoned vegetable stock, topped with fresh shredded lettuce, beansprouts, mint, cilantro, scallion, fried shallot, crushed peanuts and thinly sliced banana blossom. This dish is PERFECTLY paired with a crispy sesame cracker and a squirt of lime. The proteins include tofu and bean curd skin, in addition to sautéed oyster mushroom with garlic and shallots.
For the broth • 4 quarts water • 3-4 cloves of garlic • 1 medium sized shallot • 2 yellow onions • 1 leek stalk • 1 large tomato • 1 small daikon/Korean radish • 4 tbsp oil • 1 tsp turmeric • 1 tsp annatto seed • 1 tsp cornstarch or tapioca starch • 1/4 cup mushroom powder or vegetable bouillon •1/4 cup vegan fish sauce (soysauce/tamari/liquid aminos are suitable alternatives)
Proteins/filling/garnish • 1 300g pack rice/mi quang noodles • 1 cup of sliced fried tofu • 1 cup of sliced mushroom (oyster, shiitake or portobello) • 1-2 sheets of soaked bean curd sheets/tofu skin
• Beansprout • Mint
• Scallion/Green onion
• Sesame cracker
• Crushed peanuts
• Sliced banana blossom
Boil water with bouillon/powder. Add 1 1/2 yellow onions (halved), leek, tomato and daikon radish into the water and let it simmer.
In a small pan, prepare 2 tbsp of oil and add in the annatto seed. Let it fry until the oil becomes a red color. Strain oil, discard seeds.
In a large pan/pot, fry minced garlic, sliced shallots and half diced onion with 2 tbsp of oil. Add proteins, mushroom and stirfry until golden. Add turmeric, followed by the vegan fish sauce or soysauce.
Remove tomato once it’s cooked, and quarter it. Add it into the frying pan and stir until the tomato is stewed with the other ingredients.
Carefully ladle broth into pan until desired consistency/flavor. Thicken with cornstarch water. Pour annatto oil over top of stew and stir.
Pour warm stew over bed of noodles and garnish to taste!
