Cajun Tofu Nuggets by @cookingforpeanuts. 🤤 A recipe full of flavour! Check it out below:
Recipe: Press 1-14oz block extra firm tofu to remove excess liquid. Cut into approximately 1-inch cubes. In bowl 1 mix: 1 cup whole-wheat or all-purpose flour + 3 tsp Cajun spice + 1 tsp salt (or to taste). In bowl 2 mix: 1 cup plant milk + 2 tsp sriracha + 1 tsp apple cider vinegar and whisk. In bowl 3 add 1 cup panko. Dip one piece tofu into flour bowl to coat each side lightly in flour, shaking off excess. Dip tofu into milk mixture. Repeat flour and milk mixture one more time. Finally, dip tofu into panko bowl and coat well. Repeat for each piece of tofu. Bake on lined sheet at 400F until starts to turn crispy, about 20 minutes, flipping half way. While tofu is baking, in a small saucepan heat: 1/2 cup hot sauce + 2 tbsp vegan butter + 1 tbsp olive oil + 1 tbsp maple syrup. Whisk well while heating. Try sauce and adjust ingredients to taste. Heat sauce until starts to thicken. Once tofu is slightly crispy, remove from oven and brush with sauce on all sides before returning to oven for another 15 minutes. Serve with remaining sauce as soon as tofu is ready.

Ingredients
1 large carrot
1 1/2 tbsp oil divided
4-5 tbsp vegetable broth or water
1 onion diced
1 batch vegan cheese sauce or 7 oz (200 g) store-bought vegan cheese
2 oz (56 g) of fresh baby spinach
4 slices of sandwich bread gluten-free if needed
1/2 tbsp soy sauce gluten-free if needed
1/2 tbsp balsamic vinegar
1 tsp onion powder
1/2 tsp garlic powder
1/3 tsp smoked paprika
1/2 tsp Italian seasoning
Sea salt and black pepper to taste
Cayenne pepper optional
Instructions

Carrot:
Slice one large carrot lengthwise into strips (about 1/4 inch or 0.6 cm thick). Heat 1/2 tbsp oil in a skillet. Once hot add the carrot slices. Sprinkle some salt on top.
Add 4-5 tbsp of vegetable broth or water after a few minutes to avoid burning.
Cook with a lid on over medium heat until tender, about 12-15 minutes (adding more broth/water if needed). Flip halfway through.
Spinach/Onion Mixture:
At the same time, heat 1/2 tbsp oil in a different pan and add the diced onion. Sautè for 4-5 minutes or until nicely browned.
Add all spices, soy sauce, balsamic vinegar, and spinach. Turn off the heat after 60 seconds and set the pan aside.
Assemble Sandwiches:
Drizzle 4 slices of bread from both sides with a little oil and sprinkle some garlic powder on top. Heat them up in a pan or on the grill for a few minutes.
Prepare a batch of my vegan cheese sauce or skip this step if you use store-bought cheese.
Top two slices of bread with a heaped tbsp of the vegan cheese sauce.
Then add the spinach, onion mixture.
Top with the carrot slices.
Add another layer of vegan cheese sauce.
Finally, top with the other slice of bread. Cook on medium heat in a skillet or on the grill for 2-3 minutes or until golden brown. Flip and cook for 2-3 minutes more, then remove from pan. Enjoy!

Fried red onions
Mushrooms
Chickpeas
Peas
Avocado
2 tbsp coconut oil
4 cloves of garlic, minced
1 handful fresh parsley, finely chopped
1/8 tsp cayenne pepper
2 tbsp tamari or soy sauce
Sesame seeds for garnish (optional)
Instructions:
1. Cook the rice according to package directions.
2. Place some water in a wok or frying pan and bring it to a boil. Then add the veggies (they must be covered by the water) and cook for 1 to 2 minutes over high-heat. Drain the veggies and set aside.
3. Heat the oil in the wok and add the garlic, cayenne powder and parsley. Cook over high-heat for over 1 minute, stirring occasionally.
4. Add the vegetables, rice and tamari. Cook for about 1 to 2 minutes more.
5. Add some sesame seeds for garnish (optional).
Store the rice stir fry in a sealed container in the fridge for up to 5 days. Enjoy!

Almond Butter BBQ Pasta with Chickpeas by @ariamsfar. A delicious bowl of pasta is always a good idea 😋
Ingredients:
5 oz pasta of choice
1.5 cup chickpeas
¼ cup almond butter
2 tbsp tamari (or soy sauce)
3 tbsp BBQ sauce
1 tsp maple syrup
⅛ tsp ginger powder
¼ tsp garlic powder
salt
1. Cook the pasta according to the package instructions.
2. In the meantime, add all the sauce ingredient to a blender and blend until the sauce looks smooth.
3. Heat a large skillet over medium with a drizzle of oil. Once warm, add the chickpeas and 1/3 of the sauce. Cook for a few minutes until the chickpeas are lightly brown. Transfer to a bowl and set aside.
4. Next, add the rinsed pasta, the remaining almond butter sauce and the chickpeas into the pan. Cook for a few minutes until sauce is warm and well combined with the pasta and the sauce.
5. Serve garnished with chopped cilantro, chili flakes or other toppings of choice.

My dad recently came in town and gave me a hard time about being plant based. He wanted me to cook a traditional soul food dinner like I used to make but I assured him that I can make the same food that he would normally eat but without meat. After trying it he was amazed and wants to limit his meat consumption and eat more plant based meals. I was so happy I was able to make a tasty soul food meal made with all plants, the family absolutely loved it!

➡️all of the hearty and delish goodness of meatballs and sauce... but VEGAN 🎉

Recipe: •2/3 pack of @organicvillagefood tempeh •1 cup almond meal
•2 tbls of salsa •1/2 tbls of olive oil
•1 egg replacer •1 tbls of BBQ sauce
•1/3 cup of @buteislandfoods vegan cheese •A few Handful of spinach •1 tsp paprika •1 tsp of BBQ seasoning •Dash of salt and pepper ➡️mash everything up with a fork/ masher/ pulse in a food processor and roll into table spoon sized balls. Coat in GF breadcrumbs, and bake! Bake these until they are the desired consistency for you- I like mine crunchy on the outside and soft inside 🙌🏻

A super tasty, whole foods and nutritious AF breakfast (or lunch, or dinner - whenever you feel like eating it) ⁣⁣

This is my go-to savoury breakfast! ⁣⁣
⁣⁣
Recipe:⁣⁣
⁣⁣
Get a firm block of tofu, either mash it down with a fork or put it in a blender for a few seconds to get it into a scrambled texture ⁣⁣
⁣⁣
Mix in a bowl with a bit of water -nutritional yeast, turmeric, black pepper, salt (black salt if you have it otherwise normal salt) & whatever other spices tickle your fancy ⁣⁣
⁣⁣
Put the scrambled tofu into a frying pan, pour the mixture on top & heat until desired texture - you can also add greens in to cook as an option ⁣⁣
⁣⁣
Toast some whole grain bread, cook some tomatoes, mushrooms, put a bit of avocado or spinach on the side and VOILAAAAA ⁣⁣

Beans: Cook 1 chopped onion (small dice) in a little vegetable broth or sauté in olive oil until translucent, about 7 minutes. Add 3 minced garlic cloves and cook another minute. Mix in 1 tbsp tomato paste. Add 3 cups cooked black beans, 1 tbsp vegan Worcestershire sauce, 1 tbsp Dijon mustard, 1 tsp maple syrup and 1 tsp sriracha. Add desired amount of vegetable broth or bean liquid and simmer about 10 minutes, adding more liquid as needed. Salt and black pepper to taste. 🌱Sweet potatoes: prick sweet potatoes evenly over surface with fork. Bake on lined sheet at 400F until thickest part of potato is easily pierced with fork. Once cool, slice open with a knife.🌱Corn: remove husk and silk. Either use tongs to hold end of corn and turn slowly over gas flame on stove until evenly charred, or roast on oven rack at 400F. Allow to cool before removing kernels with a sharp knife. (Optional: reheat kernels in saucepan with a little melted vegan butter.) Toss with fresh lime juice, cilantro, chili powder and salt to taste.🌱Recipe easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste.

Made mushroom burgers in a rainbow shard wrap with broccoli sprouts, tomatoes, and jalapeños with a side of turmeric turnip fries and guacamole to dip them in.
Look at all those colors! One of my favorite things about being vegan is definitely the amount of color brought into my world.
To make the mushroom burgers I started with about 16 oz of mushrooms, cooked them until their liquids released and then drained.
Added the mushrooms to a food processor and pulsed until they were crumbles.
Added 1/4 cup of tahini, 2 table spoons chia seeds and 2 table spoons of pea protein. Combine and let sit so the chia seeds can absorb the liquid.
Bake at 350 for 25 mins

Forse non tutti sanno che il pomodoro, quando arrivò in Europa dalle americhe nel XVI secolo, era considerato una pianta ornamentale ed esisteva solo in versione di colore giallo, proprio come questi ciliegini che abbiamo usato oggi per la nostra ricetta. È un pomodoro dal sapore dolce, caratterizzato dalla totale assenza di acidità, ricchissimo di sostanze antiossidanti e di vitamine e, non da ultimo, dal bellissimo colore che mantiene anche in cottura.
La ricetta per questi profumatissimi Fusilli è semplice quanto squisita! Basta lavare i pomodorini, tagliare ciascuno di essi in quattro, aggiungere abbondante olio extravergine di oliva e Maggiorana assieme a un pizzico di sale e disporli in una teglia in cui lo strato abbia un'altezza doppia rispetto a quella di un ciliegino. Vanno cotti in forno per circa un'ora alla temperatura di 170°C, fino a che quelli superiori non assumeranno un bel colorito ambrato. Poi basta aggiungere la Pasta con poca acqua di cottura, una spolverata di Pepe ed ancora un filo di olio a crudo e il gioco è fatto ! Un piatto ottimo anche freddo, da gustare con un Fiano di Avellino o una Falanghina per apprezzarne ancora più la dolcezza e gli aromi solari 🌞
Con l'avvicinarsi dell'estate è una ricetta che vi consigliamo davvero di sperimentare 😉

Cajun Tofu Nuggets by @cookingforpeanuts. 🤤 A recipe full of flavour! Check it out below:
Recipe: Press 1-14oz block extra firm tofu to remove excess liquid. Cut into approximately 1-inch cubes. In bowl 1 mix: 1 cup whole-wheat or all-purpose flour + 3 tsp Cajun spice + 1 tsp salt (or to taste). In bowl 2 mix: 1 cup plant milk + 2 tsp sriracha + 1 tsp apple cider vinegar and whisk. In bowl 3 add 1 cup panko. Dip one piece tofu into flour bowl to coat each side lightly in flour, shaking off excess. Dip tofu into milk mixture. Repeat flour and milk mixture one more time. Finally, dip tofu into panko bowl and coat well. Repeat for each piece of tofu. Bake on lined sheet at 400F until starts to turn crispy, about 20 minutes, flipping half way. While tofu is baking, in a small saucepan heat: 1/2 cup hot sauce + 2 tbsp vegan butter + 1 tbsp olive oil + 1 tbsp maple syrup. Whisk well while heating. Try sauce and adjust ingredients to taste. Heat sauce until starts to thicken. Once tofu is slightly crispy, remove from oven and brush with sauce on all sides before returning to oven for another 15 minutes. Serve with remaining sauce as soon as tofu is ready.

Vegan wontons with jackfruit continued (please refer to previous post): boil a pot of water. When the water is boiling, place wontons in the pot. Add another cup of water and wait til it comes to a boil. When it is boiling, the wontons should be finished. Serve with soy sauce, coconut aminos, rice or red vinegar, in a veggie miso broth and feel free to add the ramen 🍜 noodles or another kind of vegan noodle (japchae/sweet potato noodles or vermicelli are great alternatives). Ingredients:
Two large bananas, smashed
1/4 cup of agave
1/3 cup of tahini butter
1 Cup of Kamut flakes (I think)
1 cup of quinoa flour (More or less)
1/2 cup of spelt flour(more or less)
1/2 cup of chopped raw walnuts
Pinch of sea salt

Vegan wontons! After some research I made up this recipe. Making wontons was a huge part of my childhood. My mom would prepare the batch of meat (pork), add scallions and ginger, and mix it all up. When it was ready my sister, my mom and I all sat around the table folding the wontons. This was fun for me, but of course I didn’t realize my hands were handling the meat of an actual pig. Becoming vegan meant never eating pork wontons again, or making them. But the discovery of jackfruit as a meat substitute has really changed the vegan game. I was curious if anyone had used jackfruit for wontons and found that the idea isn’t new! After some research on non vegan and vegan wonton recipes I created my own. Here it is 🥟 🍜. 1. Photo of uncooked wontons ready to be boiled. 2. Young green jackfruit in my ninja ready to be processed. I used just one can of jackfruit. You can get canned young green jackfruit at Asian markets and probably stores like @wholefoods or @sprouts - however Asian markets are mad cheap like under $2 per can. 3. Place the shredded jackfruit in a large mixing bowl. 4. Minced shiitake mushrooms. I had some cooked left in the fridge so I used that, but if I had more I would have used more. Chop up 3-5 shiitake mushrooms into very small pieces and add to mixing bowl. 5. Green onion/scallions. Chop up 2-3 green onions (1/3-1/2 cup) and add to mixing bowl. 6. Chop up some garlic (small pieces or minced) About 2-4 cloves - add to bowl. 7. Mince or chop up some fresh ginger. About 2 tsp. Add to bowl. 8. Add 2 tbsp sesame oil, 1 tbsp soy sauce or coconut aminos, 1 tsp sugar, and 1 tsp salt. Mix up all the ingredients well. 9. Lay out the wonton wrappers. Make sure to check the ingredients — some wrappers have egg so check to make sure. Gyoza wrappers are fine too. 10. Place about a tsp of mixture in the center of each wrapper then dip your index finger into a small bowl of water and moisten the edges of the wrapper. Fold over the wrapper. I’ve been recipe testing for our upcoming Connected Collective Retreat ✨ and this blue magic chia seed pudding is definitely making it on the menu! The pudding gets its pretty color from blue spirulina powder I used. Kind of mind blowing that nature makes such a vibrant color, right?💧These overnight chia seed puddings are packed full of protein, fiber, healthy fats and a ton of nutrients. Perfect for making the night before and grabbing on your way out the door. Or if you have the time, pouring into a bowl and topping with all the things!⁣

1 cup coconut milk⁣
1/4 @salbachia white chia seeds⁣
1/2 tsp blue spirulina powder⁣
1/2 tsp vanilla extract⁣
A pinch of ground cinnamon⁣

In a glass pint jar: whisk together coconut milk, spirulina, vanilla extract and cinnamon. Then add in your chia seeds and whisk to combine. Place on the lid, shake and pop in the fridge over night to set! Enjoy in the morning :)⁣

POPCORN FALAFEL
Vegans love falafel... With recipes like this, you can’t blame us! 🤣🤪 If you wanna nail this recipe at home, here’s what you’re gonna need to know:
INGREDIENTS:
FALAFEL:
2 cans chickpeas (drained)
1 red onion (finely chopped)
Juice of 1 lemon
3 cloves garlic
2 tsp Harissa paste
1 tsp Salt1 tsp Cumin
½ tsp Pepper
½ cup Flour
¼ cup Coriander
¼ cup Parsley
BATTER:
1 cup Plain flour
½ cup Almond milk
CRUST:
1 cup Panko breadcrumbs
Vegetable oil (for frying)
TO SERVE:
Hummus
Salad
METHOD:
1.Put all the falafel ingredients into a food processor & whizz them up into a thick paste.
2.Take a spoonful of the mixture out of the food processor, roll it up into a ball in the palm put on a plate. Repeat this process until all the falafel mixture has been used up.
3.Put the batter ingredients in a mixing bowl & mix them up until you have a creamy, thick batter.
4.Dip a falafel ball in the batter, roll it around in the panko bread crumbs making sure you have a good coverage.
5.Deep fry the balls until the crust is golden brown & really crispy.

With recipes like this, you can’t blame us! 🤣🤪 If you wanna nail this recipe at home, here’s what you’re gonna need to know: INGREDIENTS: FALAFEL: 2 cans chickpeas (drained) 1 red onion (finely chopped) Juice of 1 lemon 3 cloves garlic 2 tsp Harissa paste 1 tsp Salt1 tsp Cumin ½ tsp Pepper ½ cup Flour ¼ cup Coriander ¼ cup Parsley BATTER: 1 cup Plain flour ½ cup Almond milk CRUST: 1 cup Panko breadcrumbs Vegetable oil (for frying) TO SERVE: Hummus Salad METHOD: 1.Put all the falafel ingredients into a food processor & whizz them up into a thick paste. 2.Take a spoonful of the mixture out of the food processor, roll it up into a ball in the palm put on a plate. I was scared it was going to be spicy but it wasn’t at all even though the curry flavor was there! The dish was super yummy but I still recommend getting the Yellow Curry Noodles or Pad Thai! 🍲🍜
